Italian Recipe - Pasta alla Carbonara

One of my favorite Italian Recipes,  pasta alla carbonara is a classic pasta dish with a white sauce.  Although easy to enjoy with friends and family, this Italian Recipe is a bit complicated to make.  We'll keep it as simple as possible, but you may need a helping hand.

Ingredients

2 tbsp olive oil
1 large white onion, thinly sliced
6oz proscutto or rindless bacon cut into thin strips
2 garlic cloves chopped
2 tbsp butter
1 1/3 cups heavy cream
3 large eggs beaten
1 cup freshly grated parmesan cheese
16oz spaghetti

Like I said, this Italian Recipe might get a little tricky, but I'm sure you can do it.  If you need, ask someone to lend that extra hand for a step or two.
  1. Warm a large serving dish or bowl.
  2. Cook your spaghetti as you normally would, using a tbsp of the oil while boiling.  Drain and return to the pot to keep the noodles warm.
  3. Meanwhile, heat the other tbsp of oil in a skillet over medium heat.  Add the onion and fry until its transparent.
  4. Add the bacon and garlic, and fry until the bacon is crisp.  Transfer the mixture to the warm dish or bowl.
  5. Melt and slightly brown the butter in the skillet.  Return the bacon mixture to the skillet.  Stir well and then cover and keep warm.
  6. In a large bowl, mix the eggs, cream, and cheese.  Season to taste with salt and pepper if you want.
  7. (the tricky part)  Mix the spaghetti in to the bacon mixture, then quickly tip the whole (warm) mixture into the egg and cream mixture.  Toss the spaghetti quickly in the egg and cream mixture with two forks, coating well.  Serve at once.
It is important to keep the mixture as warm as you can in the pan so when you quickly toss it in to the egg mixture, it cooks the eggs.  Tossing it quickly with the forks should prevent the eggs from scrambling.
