Italian Recipe - Tomato Basil Chicken and Rice

This is a great Italian recipe that is robust and full of flavor.  I make this simple entree frequently when I want something quick to prepare and easy to cook after a long night at work.  The best part is that it cooks in one dish, making cleaning a breeze. 

Ingredients 

4 Boneless Skinless Chicken Breasts 
3/4 cup of uncooked white rice 
1 can tomato basil soup 
2 cloves of garlic, minced 
1/4 cup of fresh basil leaves 
1/4 teaspoon salt 
1 teaspoon black pepper 
1 teaspoon red pepper flakes 

Italian Cooking 
  1. Preheat the oven to 375 degrees. 
  2. Place the rice into the bottom of a shallow baking dish. Evenly space the chicken breasts around the dish, and pour the tomato basil soup over the chicken and rice. 
  3. Fill the can the soup came in 1/2 full with water and add that to the baking dish. 
  4. Now evenly sprinkle the garlic, salt, pepper, and red pepper flakes over the top of the dish. 
  5. Cook in a 375 degree oven for 45 minutes, or until the juices of the chicken run clear when cut. 

I generally serve this easy Italian recipe with a salad and some garlic bread.  If you use a tomato basil soup with chunks of tomato, it adds a great texture to the dish.
