Ingredients
4 Boneless Skinless Chicken Breasts
3/4 cup of uncooked white rice
1 can tomato basil soup
2 cloves of garlic, minced
1/4 cup of fresh basil leaves
1/4 teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes
Italian Cooking
- Preheat the oven to 375 degrees.
- Place the rice into the bottom of a shallow baking dish. Evenly space the chicken breasts around the dish, and pour the tomato basil soup over the chicken and rice.
- Fill the can the soup came in 1/2 full with water and add that to the baking dish.
- Now evenly sprinkle the garlic, salt, pepper, and red pepper flakes over the top of the dish.
- Cook in a 375 degree oven for 45 minutes, or until the juices of the chicken run clear when cut.
I generally serve this easy Italian recipe with a salad and some garlic bread. If you use a tomato basil soup with chunks of tomato, it adds a great texture to the dish.
