Italian Recipe - Pasta alla Carbonara

One of my favorite Italian Recipes,  pasta alla carbonara is a classic pasta dish with a white sauce.  Although easy to enjoy with friends and family, this Italian Recipe is a bit complicated to make.  We'll keep it as simple as possible, but you may need a helping hand.

Ingredients

2 tbsp olive oil
1 large white onion, thinly sliced
6oz proscutto or rindless bacon cut into thin strips
2 garlic cloves chopped
2 tbsp butter
1 1/3 cups heavy cream
3 large eggs beaten
1 cup freshly grated parmesan cheese
16oz spaghetti

Like I said, this Italian Recipe might get a little tricky, but I'm sure you can do it.  If you need, ask someone to lend that extra hand for a step or two.
  1. Warm a large serving dish or bowl.
  2. Cook your spaghetti as you normally would, using a tbsp of the oil while boiling.  Drain and return to the pot to keep the noodles warm.
  3. Meanwhile, heat the other tbsp of oil in a skillet over medium heat.  Add the onion and fry until its transparent.
  4. Add the bacon and garlic, and fry until the bacon is crisp.  Transfer the mixture to the warm dish or bowl.
  5. Melt and slightly brown the butter in the skillet.  Return the bacon mixture to the skillet.  Stir well and then cover and keep warm.
  6. In a large bowl, mix the eggs, cream, and cheese.  Season to taste with salt and pepper if you want.
  7. (the tricky part)  Mix the spaghetti in to the bacon mixture, then quickly tip the whole (warm) mixture into the egg and cream mixture.  Toss the spaghetti quickly in the egg and cream mixture with two forks, coating well.  Serve at once.
It is important to keep the mixture as warm as you can in the pan so when you quickly toss it in to the egg mixture, it cooks the eggs.  Tossing it quickly with the forks should prevent the eggs from scrambling.

Italian Recipe - Bruschetta with Tomatoes

An Italian Recipe classic, Bruschetta makes a great appetizer.  This can be made various ways, however, with tomatoes and roasted red peppers are the two most common.  We'll be making the Bruschetta with Tomatoes today.

Ingredients

2 garlic cloves
8 slices of Ciabatta 
16 basil leaves (shredded) (I recommend fresh)
4 sun-dried tomatoes
10oz cherry tomatoes
4 tbsp extra virgin olive oil
3 tbsp balsamic vinegar
salt and pepper

The steps for preparing this great italian recipe are fairly simple.  Its quick and easy, and the whole family will love it!
  1. Cut the cherry tomatoes in half.
  2. Cut the sun-dried tomatoes into strips.  The thin strips increase the flavor.
  3. Place the cherry tomatoes and sun-dried tomatoes in a medium bowl.  Add the olive oil and shredded basil and toss to mix well, coating evenly.
  4. Add the balsamic vinegar and toss well.  Season with the salt and pepper to taste.
  5. Lightly toast the ciabatta while cutting the garlic cloves in half.
  6. Rub the garlic's cut side over both sides of the bread.  Top the bread with the tomatoe mixture and serve immediately.

Italian Recipe - Minestrone Soup

This must be my favorite Italian recipe of all, Minestrone soup.  Its classic and amazing.  We'll start with the ingredients.

Ingredients

3 garlic cloves
2 large carrots
3 large onions
1 large potatoe
3oz green beans
3oz zucchini
4 tbsp butter
1/4 cup olive oil
2oz diced bacon
6 cups chicken stock
1 bunch chopped basil
3 1/2 oz chopped tomatoes
2 tbsp tomatoe paste
3oz parmesan cheese peel
3oz broken up dried spaghetti
salt, pepper, and grated Parmesan to season

Italian Cooking

So to make this great Italian recipe, follow these steps:
  1. Finely chop the garlic, carrots, celery, onions, potatoes, green beans, and zucchini.
  2. Heat the butter and oil in a large pan and add the bacon.  Cook for 2 minutes.  Add onions and garlic and fry for two minutes, then stir in the other chopped ingredients and fry for 2 more minutes.
  3. Add the green beans and zucchini and fry for 2 minutes while stirring.
  4. Cover the pan and cook for 15 min, stirring often.
  5. Add the stock, basil, tomatoe paste, tomatoes, and cheese peel, and season to taste.  Boil, then simmer for 1 hour.  Remove the cheese peel.
  6. Cook spaghetti seperately.  (boil water, etc)
  7. Add noodles, and serve, with grated parmesan to taste.
And thats it, pretty simple over all. Minestrone soup, another great Italian recipe!
