Ingredients
3 oz bacon, chopped
1 yellow pepper
1 orange pepper
7 radishes, washed and trimmed
1 celery stalk, finely chopped
3 plum tomatoes, cut into wedges
3 tbsp olive oil
1 tbsp fresh thyme

- Dry fry the chopped bacon in a medium skillet until crispy. Remove from heat and set aside to cool.
 - Using a sharp knife, halve and seed the bell peppers. Slice the bell peppers into long strips.
 - Using a sharp knife, halve the radishes and then cut them into wedges.
 - Mix together the bell peppers, celery, radishes, and tomatoes.
 - Toss the mixture in the olive oil and fresh thyme . Season to taste with salt and pepper.
 - Transfer to serving plates and top with crispy bacon.
